González Byass is one of Jerez’s defining houses, founded in 1835 and still family-owned, with a long-standing focus on Sherry made in the classic solera tradition. Its Sherries are rooted in Palomino grown on Albariza soils and shaped by the region’s hallmark aging methods, from flor-aged styles that emphasize lift and salinity to oxidative styles that deliver depth, spice, and long, savory finish. The portfolio includes iconic bottlings such as Tío Pepe, a Fino aged under flor and a global reference for the style.
The same Jerez identity extends into vermouth through La Copa, a revival of an archival house recipe dating to the late 1800s. Built from Sherry wines and macerated with botanicals, La Copa offers a distinctly Andalusian take on vermouth, designed as a true apéritif and a serious cocktail component.
