Tolloy

Tolloy is an Alto Adige winery, created in collaboration with Cantina di Salorno and dedicated to Johann Tolloy, an early-18th-century local innkeeper and host. Alto Adige’s geography does the work here: mountain influence, dry air, and bright diurnal shifts produce wines with nerve, precision, and an unmistakable wet stone profile.

The range is built around classic regional varieties including Pinot Grigio, Pinot Bianco, Gewürztraminer, Chardonnay, Pinot Nero, and Lagrein. Aromatics are vivid, acidity is bright, and the resulting wines are crafted to be enjoyed with food. Tolloy fits especially well where a list needs a refined, varietal-true, and modern elevated Northern Italian white or a cool-climate red that feels deeply tied to place.
